- Okay, you might ask why I'm first getting exited about the photos from India and then kicking up some old ones from last year.. No sweat. Sitting and getting them ready as fast as I can. Until then you just gotta live with these ones.

- Had a cooking day with my girls Petra and Frida last tuesday. Made so much good food, and man it was gooood!
 
Now I'm on my way to the Copenhagen airport with the train. Starting to feel some butterflies in my tummy...!

- Had a cozy veg lunch / dinner with Petra, a lovely soul and dance partner from work. We're have this cooking day once a week for weeks and weeks at mine or her place. So much more fun and relaxed than eating unhealthy expensive stuff out in the town.
Oh, will really miss these moments.

A short workout and then it's time for my wednesday yoga this evening.
Getting really exited for my yoga workshop this saturday afternoon in Andersberg at ZONEN. A community for girl, mostly immigrants. It's going to be such a interesting and educative thing for me. And hopefully everyone there feels comfortable and enjoys it.
 

HEALTHY TRUFFLES.

 
- I never been doing this much making in my whole life like I've been doing this autumn. Yes, this autumn is all about ponchos, yoga clothes, tea, cooking dinner with friends and heaps of baking.
Not long time ago I tried something new and made some healthy truffles. But I couldn't wait to roll them so we all here at home just ate if straight from the bowl with a spoon.

HEALTHY HOMEMADE CHAI TEA.

We're coming into cold and gray times in the noth so to keep yourself energized and healthy I've been playing in the kitchen with all kinds of recipes.
Lately I've been longing for that popular vegan chai tea that it the No #1 thing people drink during winter in Melbourne.

"One soy chai tea / latte, please."
 
Yepp, you'll hear that sentence everywhere all the time. Especially if you work in a café!
I got pretty tired of that after a while when people always ordered it while I was working. But did I get tired of that amazing smell and taste? NEVER!

 
Here's how I did it at home a while ago..
And each of these spices is packed full of nutrition and anti-inflammatory properties, so you can drink up guilt-free. Use organic ingredients whenever possible.
 
Ingredients:

    24 ounces unsweetened almond or soy milk
    1 teaspoon ground cardamom
    ¾ teaspoon ground cinnamon
    ½ teaspoon ground allspice
    ½ teaspoon finely grated fresh ginger
    ¼ teaspoon pure vanilla extract
    1 small pinch coarse ground black pepper

Optional sweeteners:
    1 tablespoon raw honey
 
Recipe: Combine all of the ingredients (except sweeteners) in a small pot over medium heat and whisk to combine. Heat over medium-low heat 5-7 minutes until the flavors have come together; serve immediately. Sweeten to taste.

Chai Tea Variation: Add 1 organic unflavored black or green teabag to each hot serving. Steep for 5 minutes; discard teabag before serving.

Chai Latte Variation: Add 1-2 shots of organic espresso or strong organic coffee to each serving.

- Woha! Over a week of no update. I have totally forgotten that it have been such a long time ago.
Well, I guess I've been so busy with my jobs, heaps of staff meetings, international Zumba instructor education weekend in Copenhagen with famous Steve Boedt, training, drive lessons and all other "every-day-stuff".
 
I'm still crazy busy and don't have much time and energy for the best, working out and hanging out with friends.
But I'm still trying to sort out some stuff and can't wait to get a few things done from my check list.

- Oh man... a few weeks ago we had a big sushi dinner at home and that was the first time I had sushi this year!
As some know, I LOVE sushi and had it one a week back when I lived in Australia. And haven't had sushi since I was there until now. God, I missed it...
 
If anyone knows the best sushi place in Halmstad, then let me know!
 

kesella choco cake.

 
- I've never been baking with kesella before and had some in the fridge so I though I'll try a new recepie.
Personally I think it might need a bit more sweetening.
 
Ingredients

     1.5 cups Kesella
     1 cup milk
     1 egg
     1.5 cups oatmeal (rolled oats mixed into flour)
     1 tsp baking powder
     0.5-1 cup cocoa powder
     1 cup sweetening (ex. mash down a banana, stevia, honey or agave) -I used honey.
     Optional: 0.5 cups of coconut flakes, a few tablespoons of peanut butter, vanilla powder, chopped nuts

Instructions

1 Mix all the dry ingredients in a separate bowl.

2 Stir in the wet ingredients.

3 Grease / oil a form and either Sprinkle with breadcrumbs or coconut flakes. Pour the batter into the baking pan and bake in middle of oven at 200 degrees for 15-20 minutes (I had my inside in 17 minutes)

4 Allow to cool a little before cutting into pieces of this recipe, I got 6x large thick pieces.
Serve with berries.

The thunder and rain just came to Halmstad and I'm doing laundry. I'm feeling like baking all the time. What's wrong with me? Haha.. I guess it's the weather.

I'm counting down the hours to 1pm then I'm going to skype with Lyka, my best friend in Melbourne, AU.
 
Then I'll meet up with my yogi friend. This evening it's all about working out and yoga.

- On of many surprises I made to my brother on his birthday.
A healthy chocolate/banana/coconut ice cream without sugar, dairy of fat. And it is tasting deliciously sweet and light.

- I've got in to a period there I love to experiment with baking healthy and sweet things. Of course they are all sugar-free, fat-free and sometimes even vegan.

I never been in to it that much as now. Hmm.. funny how I just got in to it randomly.
I guess my partner in crime in Melbourne, AU inspired me. There's no one like here. Kicking it in the gym soo hard no one can ignore her and then go home and bake all kinds of delicious things. Mostly gluten-free and all that stuff that we fitness freaks are in to.

- Made a delicious fast, easy and ofcause heathy lunch today.
My family friend Sara from Melbourne is the best when it come to healthy eating and so I found this on her page. Check out th link under the photo.
 
Here's what you need to enjoy it.
 
Ingredients:

    1 or 2 slices of good quality seeded bread, toasted
    1 ripe avocado, roughly smashed with a fork
    About 40g roughly crumbled feta
    About 6 fresh mint leaves, finely chopped
    Squeeze of fresh lemon juice

Method:

    Smash the avocado in a small bowl then gently mix through the feta and mint. Don’t mix too much or you won’t have any larger chunks of feta left.
    Toast the bread.
    Cover the toast in the avocado + feta mix and then add a squeeze of fresh lemon.
I added some black pepper too.
 

Ingredients -

swedish healthy-sugarfree-sticky chocolate cake.

 
- I made this delicious healthy chocolate cake. It's a tipycall swedish cake, similar to brownie and chocolate mud cake but much more sticky!
Here's how you make it:
 
Ingredients
     2.5 tsp cocoa
     ¼ mashed avocado
     1 egg white
     1 tsp melted coconut oil
     1-2 tablespoons sweetening
     1/4 teaspoon baking soda
     1 pinch of vanilla powder
     Optional: grated coconut, chopped nuts, a little peanut butter, chopped dried fruit ..

Instructions

Mix the dry ingredients separately, then stir in the wet. Bake in oven for 10-12 minutes at 175 degrees in the oven. Align the cake so that it does not become dry, you can remove it after 10 minutes and test with a swab. It may even need to be inside less than 10 minutes, it depends on size (cake thickness) and oven.
I had it for 9 min cause I love when it's really sticky!

mellow omelette - h e a l t h y v e g e t e r i a n .

 
- Made this mellow & healthy omelette a while ago.
It's great how good everything goes with eggs. I didn't have much in the fridge at the moment.
So I found some spinach, boiled sweet potatoes and made a salad with avocado on the side.
Some herbs and voíla! Delicious, easy lunch / dinner.
