IN TO THE MUSHROOM FORREST.

 
- Had a beautiful walk with mum in one of the forests that I've been spending quite some time in when I was little.
It was great to just walk around in the silence, breath in the air and soak up the nature. We found a lote mushrooms too! Got our secret places.... ;)
 
And guess what mum made for dinner the same day?
Mushroom soup! Yummmie yummie in my tummy!
 

D A Y O F F .

 
- It's my day off from everything. And then I mean all my 4 different jobs, from meeting, from the traffic school, from all the "must's". So today I stayed in the bed a bit longer, sitting now with the biggest cup of green tea and listening to some good tunes with mum as my warm company.
 
It will be a day of working out, trying new workouts, heaps of tea and a coffee or two, reading, soft music, maybe some yoga and catching up with a friend or watshing movies. This is real luxury for me right now!

- Hello chocolate weekend.
Yesterday I had some chocolate mousse and cheesecake at work, made a quick and healthy choco/banana cake / bread-ish with my lovely friend and tomorrow I guess I'll have some of this delicious thing on the photos above.

- Hello World. Hope life's treating you all well.
I'm in working mood almost everyday in the gym, as a yoga teacher, with functions, in café, restaurant and hotel. Yes, that's where I work. I get easily bored in one place here in Halmstad cause it's such a small town and I know Halmstad way too well.
Hopefully I don't get stuck here too long. But first I just gotta get my drive's licence that I've been pushing forward a bit... hehe.
But it is in progress right now. I'm actually sitting and reading the book (must be the most boring book in the world history) right now.

- New week, new goals.
I'm starting the day with some photos from the International Zumba Instructor education weekend in Copenhagen with Amazing Steve Boedt.
It was nearly 3 weeks ago I was there. The time really flies away..!

- Mom came home with a lot of nice and good from Poland! In addition to all ayurvedic stuff, new coffee beans and snacks, I also got a amazing ponch and some other relaxing & bohemian clothes. What a luxury..!

- Sharing some photos from my weekend in Copenhagen a couple of weeks ago. Fancy hotel and hotel breakfast with the girls during our Zumba instructor education. So much fun!
 

NEW & FREE YOGA CLASS THIS WEEK.

 
- Hi souls all over the world.
If some of you who read my blog will be in Halmstad tomorrow or the day after (wednesday & thursday) I will be doing my new Hatha yoga class. This time more new fun things focusing on much more than just the breath, inner vibrations, natural heat and being in the present.
 
So if you're around, you're more than welcome to join for 1h of yoga at ACTIC Flygstaden on wednesday 7pm and ACTIC Simhallsbadet (City) at thursday evening, 6pm.
This week it's all free at ACTIC. So try it out. Otherwise you can just let me know if you're interested in my yoga classes.

- Do you have any way to ripen bananas and craving for ice cream or sorbet?
Put the bananas in the freezer for a night / few hours and then mix it all up with your choice of frozen berries or fruit.

If you'd like to, you can ad a bit of honey.

RELAXING WEEKEND.

 
- Finally some time to relax. Been sleeping 8h last night and today too.
Walked in the forrest, picking mushrooms and taking photos with mum yesterday.
Had a lovely veg / mushroom soup dinner with my yogi friend Suzana and mum and went to my old friend's housewarming party last night. Today I had a delicious Kapha porridge for brekky, tea bag foot-spa and it's now time to go and vote for a better Sweden.
 
These last couple of weeks been hectic. And then I mean waaaay too hectic. The weekend can't get better!

A RAINY EVENING IN COPENHAGEN.

 
- Hi world. I found these photos of my lovely danish friend Jeppe when I was in Copenhagen a couple of weeks ago.
The weather was showing clear signs that the summer was far away from us and the autumn here to stay.
But it didn't matter. We were enjoying a beer & a hot cup of tea together, catching up on the 3 years we haven't seen each other.
Reconnecting and reunions, love it!

HEALTHY HOMEMADE CHAI TEA.

We're coming into cold and gray times in the noth so to keep yourself energized and healthy I've been playing in the kitchen with all kinds of recipes.
Lately I've been longing for that popular vegan chai tea that it the No #1 thing people drink during winter in Melbourne.

"One soy chai tea / latte, please."
 
Yepp, you'll hear that sentence everywhere all the time. Especially if you work in a café!
I got pretty tired of that after a while when people always ordered it while I was working. But did I get tired of that amazing smell and taste? NEVER!

 
Here's how I did it at home a while ago..
And each of these spices is packed full of nutrition and anti-inflammatory properties, so you can drink up guilt-free. Use organic ingredients whenever possible.
 
Ingredients:

    24 ounces unsweetened almond or soy milk
    1 teaspoon ground cardamom
    ¾ teaspoon ground cinnamon
    ½ teaspoon ground allspice
    ½ teaspoon finely grated fresh ginger
    ¼ teaspoon pure vanilla extract
    1 small pinch coarse ground black pepper

Optional sweeteners:
    1 tablespoon raw honey
 
Recipe: Combine all of the ingredients (except sweeteners) in a small pot over medium heat and whisk to combine. Heat over medium-low heat 5-7 minutes until the flavors have come together; serve immediately. Sweeten to taste.

Chai Tea Variation: Add 1 organic unflavored black or green teabag to each hot serving. Steep for 5 minutes; discard teabag before serving.

Chai Latte Variation: Add 1-2 shots of organic espresso or strong organic coffee to each serving.

- Woha! Over a week of no update. I have totally forgotten that it have been such a long time ago.
Well, I guess I've been so busy with my jobs, heaps of staff meetings, international Zumba instructor education weekend in Copenhagen with famous Steve Boedt, training, drive lessons and all other "every-day-stuff".
 
I'm still crazy busy and don't have much time and energy for the best, working out and hanging out with friends.
But I'm still trying to sort out some stuff and can't wait to get a few things done from my check list.
